This is the perfect “What to Make for Dinner”
Hands down, this Tuna Poke Bowl is one of my favourite dinners to make. It’s fresh, colourful, healthy, and ridiculously easy to throw together. And really, what more do you want on a weeknight?
This recipe makes two generous servings. Simply divide the ingredients between two bowls: start with the cooked, cooled rice, top with everything else, drizzle with the garlic lemon mayo, and top with the crispy chilli sauce, and dinner is done.
Ingredients
- 1 cup basmati rice cooked as per instructions and cooled
- 1 ahi tuna fillet, cut into small cubes
- 8 large prawns, cooked and peeled
- 1 mango, peeled and diced
- 1 carrot, grated
- ¾ cup defrosted edamame,
- 1 avocado, diced
- 1 mini cucumber, sliced
- 2 Green onions, thinly sliced, for garnish
- 1 tsp per bowl Spicy, crispy chilli sauce (optional)
Garlic Lemon Mayo
- ½ cup mayonnaise
- Juice of 1/2 lemon, or enough to thin the mayonnaise to a drizzling consistency
- 1 garlic clove, pressed or finely minced
