Summer isn’t summer without the first taste of potato salad
My mother made the best, and it just so happens to be one of my personal favourites. I’ve probably eaten buckets of it over the years. Full disclosure: it’s incredibly addictive! With just a few simple ingredients, it’s hard to nail down exactly what makes this creamy potato concoction so irresistible. Here’s my mom’s recipe, given a little twist, Llorea-style… Hope you enjoy it!
The Best Summer Potato Salad
1-1/2 lbs small nugget-size potatoes steamed until tender, sliced in half once cool
1 carrot, grated on a large box grater
1/2 red pepper diced
6 eggs hard-boiled, peeled and diced into small chunks
4 – 5 green onions, sliced finely
6 radishes, chopped into small pieces
1/2 cup fresh or frozen peas
1/2 cup or more best-quality mayonnaise
1/2 cup or more sour cream
1/2 tsp dijon mustard
salt and cracked pepper to taste
Toss all the ingredients together in a large salad bowl, tasting as you go to get that perfect creamy balance with the mayo and sour cream. Want to make it vegan? No problem! Just skip the eggs and swap in your favourite plant-based mayo and sour cream. Easy, delicious, and totally customizable!
