Summer isn’t summer without the first taste of potato salad. My mother made the best, and it happens to be one of my personal favourites. I’ve probably consumed buckets of it over the years. Full disclosure: it’s incredibly addictive. With a few simple ingredients, it’s hard to nail down what it is about this creamy potato concoction that makes me go wild for potato salad. Here’s my mom’s recipe fancied up à la Llorea style…hope you enjoy it!
SUMMER POTATO SALAD
1-1/2 lbs little nugget size potatoes steamed until tender, slice in half once cool
1 carrot, grated on a large box grater
1/2 red pepper diced
6 eggs hard-boiled, peeled and diced into small chunks
4 – 5 green onions, sliced finely
6 radishes, chopped into small pieces
1/2 cup fresh or frozen peas
1/2 cup or more best-quality mayonnaise
1/2 cup or more sour cream
1/2 tsp dijon mustard
salt and cracked pepper to taste
Combine all ingredients in a large salad bowl, adjusting the proportions of mayo and sour cream to get a perfectly creamy balance. If you want to make this Vegan-friendly, omit the eggs and substitute mayo and sour cream with Vegan options.
