Living on the West Coast definitely has its advantages. Who could argue? We have milder temperatures, oceans, beaches, mountains, forests—literally the most beautiful outdoors in our backyard. So when my son came home from pulling up crab traps and handed me fresh crabs, it was hard not to get excited. Fresh crab calls for a celebratory meal, worthy of pulling up a chair to the table. It’s decadence at its finest. We decided to use our crab for breakfast, which was absolutely delicious and so simple to make.
Ingredients
1 Dungeness Crab (cooked)
2 slices of Bread, (I like Silver Hill’s sprouted bread)
two eggs
butter
Method
Crack and peel your Dungeness crab, drizzle a little butter over the meat, and set it aside. In the meantime, poach two eggs. Pop your bread in the toaster and voilà, you’re ready to assemble. Toast on the bottom, add your fresh buttered crab meat—use all of it, pile it on—then top with your poached egg, a little salt and pepper, and lastly, another drizzle of butter. It doesn’t get much better than this. Makes two servings.
It’s meals like this that make me appreciate where I live and how lucky I am to have all of this beauty in my backyard.
