Did Someone Say Chicken?

“MAN!” It’s cold outside and what better excuse to cook some comfort food, especially roast chicken.  This has been a family favourite, my oldest son usually requesting this for his birthday dinners. It’s simple to make ahead and did I mention delicious, yes, finger-licking good;)

One whole chicken cut into pieces, or, buy your favourite pieces breasts and thighs?

3 sprigs of fresh rosemary

juice of 1 lemon

1 red onion

100 ml (approx 1/2 cup) Extra Virgin Olive Oil

salt/pepper

 Basically, this is a throw everything into a large ziplock bag, chicken first, then carefully pull the needles off of the sprigs of rosemary. Cut the lemon in half and squeeze the juice and chuck the empty rinds in too (I like to chop up smaller). Cut the onion into eighths and add to the bag. Pour in olive oil and give it a good mush about before sitting it in the fridge.  Marinate the chicken for at least a couple hours on the counter or overnight – or for a couple days in the fridge.

When you’re ready, preheat oven to 450 degrees, this is one “hot” oven…line a baking sheet with foil, salt and pepper the chicken and cooks for approximately 45 minutes, the skin will crisp up beautifully.

Serve on a plater, drizzle the juices over the chicken alongside your favourite vegetables, corn on the cobb? Mashed potatoes? I like a little green something with this. Voila! Super easy.

Enjoy this with your family and or a “friend,” which is why sharing a recipe can be a special thing. It’s not always possible to be together, especially for those special moments; it’s nice to know good food and a nice Cab bring people and a “MAN” together. Cheers Friend! xo

      • I am up way past my bedtime but am struggling to outline a speech for a class. Catching up on my blog friends is a welcome diversion. I am still in one day at time mode and that is okay for now. That breathing and calming app I mentioned a while back is quite helpful. As the time passes more ducks are in a row to allow moving on. Perhaps gracefully.
